Sevruga Royal caviar is obtained from the starry sturgeon, a small species that rarely reaches 25 kg in weight. It takes on average at least 9 years of waiting and is prepared according to the traditional recipe. It is present in the Black Sea, in the Caspian Sea and in the Azov Sea, including its respective tributaries, in the Aegean Sea and in the eastern Ionian Sea.
