Tra i vari piatti dello chef come Melanzana alla brace, Fiore di zafferano soffiato, Oliva di costoluto verde e Vermouth Cannolo di erbe e carpione, il primo piatto con il caviale \u00e8 stato Pane, burro,\u00a0<strong>caviale Sevruga Imperial<\/strong>\u00a0e nocciole, proposto ossia in uno dei modi pi\u00f9 naturali cos\u00ec che il cavale non ha avuto altri protagonisti nell\u2019interpretare la portata: gusto superbo, spavaldo, nobile. Nella Zuppetta di uva fragola, cioccolato bianco, cipollotto e\u00a0<strong>caviale<\/strong>\u00a0<strong>Oscietra Imperial \u201cpuro sale\u201d<\/strong>\u00a0la mano sicura dello chef si \u00e8 fatta sentire con spunti dolci che hanno sfidato le note salse delle uova di pesce dove anzich\u00e9 comprendere nello stesso cucchiaio pi\u00f9 ingredienti, diventava interessante alternarli cos\u00ec da generare accostamenti puri e non insiemi spuri. Nel Manzo piemontese con emulsione al curry, sorbetto di mandorle e\u00a0<strong>caviale<\/strong>\u00a0<strong>Sevruga royal<\/strong>, carne e caviale, entrambi crudi, hanno dato vita a un abbinamento che abbiamo preferito ad altri: un assaggio raw in cui il caviale condiva la carne e questa ne attenuava le note pi\u00f9 penetranti; gli altri ingredienti rappresentavano un divertissement per giocare con combinazioni di sapori e temperature senza disturbare i protagonisti del gusto. Ma qual \u00e8 il piatto che i cuochi, almeno a Milano, non fanno mai mancare in cene particolari dove sono accesi i riflettori? Il risotto che ciascuno interpreta secondo la propria creativit\u00e0, quasi fosse un foglio bianco su cui disegnare.<\/p>\n[\/vc_column_text][vc_gallery type=&#8221;flickity_style&#8221; images=&#8221;722,727,724,726,728,729&#8243; flickity_controls=&#8221;pagination&#8221; flickity_desktop_columns=&#8221;1&#8243; flickity_small_desktop_columns=&#8221;1&#8243; flickity_tablet_columns=&#8221;1&#8243; flickity_box_shadow=&#8221;none&#8221; onclick=&#8221;link_no&#8221;][vc_column_text]\n<p>Ed ecco uscire dalla cucina il quadro Risotto con pesto di pinoli, lattuga di mare, telline e\u00a0<strong>caviale<\/strong>\u00a0<strong>Oscietra royal<\/strong>\u00a0 dove due verosimilmente grosse more riprendono colore e forma del caviale posto nel centro del piatto unendo note dolci alle componenti saline e ancora umami date anche dalle telline e dalle alghe, il tutto in equilibrio magistrale e senza attriti tra temperatura del riso e caviale. Lo Storione arrosto con ristretto di cocco, pepe verde e\u00a0<strong>caviale Da Vinci royal<\/strong>\u00a0era il piatto se non annunciato, da aspettarsi nel gioco che vuole il pesce abbinato alle proprie uova, gioco a dire il vero piacevole e riuscito, utile anche per apprezzare la particolare consistenza dello storione, pesce alquanto raro nelle carte dei ristoranti. Cena convincente? Sicuramente il caviale\u00a0<strong>Ars Italica<\/strong>\u00a0non ha bisogno di convincere nessuno, ma \u00e8 quando viene proposto in un menu che temiamo che possa essere rovinato da abbinamenti incolti, ma frequenti.
