Sturgeon’s characteristics
Sturgeons have appeared about 200 milion years ago, even before dinosaurs: thei primordiality, along with their longevity, testify their incredible ability to adapt to climate change that have followed in the various geological eras. Outside of a part of the head and bone shields placed on the skin, it does not have bone but cartilage bones that make it very fragile but also completely free from fish bones. Ranked in about 27 species, they are mostly anadromous fish that when young are living in freshwater and then migrating to the sea, reaching maturation, in spring they go to rivers in search for the most suitable areas for spawing. All species of sturgeons are threatened in nature: at risk of extinction or in critical danger and, for this reason, they are protected by CITES since 1998 and included in the red list by IUCN.
